Caribbean Fix

Method

Mix the rum, lemon juice and syrup into a shaker with ice. Shake for about 10 secs before straining into the glass

Garnish with a lemon wedge.

Float the 10ml of Scotch on top by pouring it gently over the back of a spoon.

20ml Lemon juice

20ml Ginger & Honey syrup

10ml Smoky or Peaty Scotch Float
